The two differences that are actually mechanical
Caldarus is gated behind the story
You cannot marry Caldarus until the story quest "Breaking The Final Seal" is complete. Every other candidate is available on the normal 10-hearts path. If you are early in the game and set on Caldarus, that quest is your real prerequisite.
Juniper sends four pieces of furniture
After the wedding, each spouse mails you pieces of their own furniture. The standard is 3 pieces. Juniper is explicitly noted as the exception at 4. It is a small thing, but it is one of the very few numbers that genuinely differs between spouses.
What everyone else calls a difference, and we do not
Other "best spouse" pages rank candidates by loved gifts, heart-event quality, or their post-marriage schedule. Those are real considerations β but we have not verified per-character gift tables against the official wiki yet, and gift data is exactly where competing Mistria sites were measured wrong.
So this page ranks nothing it cannot source. Per-character pages with verified gift lists are being added one at a time; when they exist, this table gains a column.
The one decision that is permanent
Worth knowing before you commit: version 1.0 has no divorce mechanic, and the official wiki notes it is not known whether one is planned. Your choice of spouse is, for now, final within a save.

FAQ
Who is the best spouse in Fields of Mistria?
Mechanically there is no best. The only verified differences are that Caldarus requires the story quest "Breaking The Final Seal" first, and that Juniper mails 4 pieces of furniture after the wedding while everyone else sends 3.
Can you marry anyone regardless of gender in Fields of Mistria?
Yes. The official FAQ states marriage candidates are not locked by gender.
Can you divorce and remarry?
No. As of version 1.0 there is no divorce mechanic in the game.
